Nostalgic red sausage

The red of these red sausages is the red of nostalgia―the sentimental color of adults who, unable to let go of their youth, walk backward through life. Since you hardly ever see them in the deli section, I jumped at the chance when I found them. They’re red sausages fried as tempura, and the thin batter is just right; they go perfectly with a bottle of beer for lunch. I suppose most people would call this nostalgic, but personally, that whole “nostalgia” thing from the beginning doesn’t really resonate with me. Did those red sausages actually come in my bento? When I asked my mother, she said she’d forgotten, but she did mention that she often bought ham with a red border―a type of ham unique to Japan known as “Pressed ham”. She said she didn’t recall ever frying sausages, and she certainly didn’t know how to make them into a “octopus leg” shape.

I suppose the old notion that red is bad for your health is why sensible people tend to avoid it, but before even worrying about food coloring or color enhancers, I personally drink enough high-concentration alcohol every day to be exposed to levels many times―or even dozens of times―more dangerous, and I smoke cigarettes regularly, so there’s no point in worrying about it now. Well, maybe some consideration is needed when it comes to children. No, actually, when I bring up topics like this, it always turns into a battle of arguments over what’s safe and what’s dangerous, so let’s just stop here. The right approach is to think for yourself and enjoy eating whatever you personally think is good.

Still, I thought to myself, “Grand Mart really knows how to hit the spot”―being able to buy this just-right portion of sausage tempura for around 120 yen. The batter mixed with green seaweed adds a beautiful pop of color, and having a bottle of beer with this as a snack on a sunny holiday afternoon is truly something special.

This is salted salmon. It is the most popular breakfast dish in Japan. It is also a classic filling for rice balls. In Akita Prefecture, it is known locally as “bodakko.” The variety with an exceptionally strong saltiness is particularly beloved as a local specialty.
